Summer Meal Plan

I thought I would share my summer meal plan as this was one of my goals for this year. Cooking during the summer is not my favorite things, so I tried to keep it as simple as possible!

Monday- Crockpot
BBQ Ribs
Paleo Crock Pot Lasagna
Cilantro Lime Chicken
Paleo Crockpot Meals

Tuesday- Salad/Picnic
I’m hoping to do fun family activities on Tuesday, so these meals are ones we can take on the go.
Chicken Salad
Almond Butter and Jelly Sandwiches/Ricecakes
Cobb Salad
Steak Salad
Buffalo Chicken Salad

Wednesday- Ethnic
Crockpot Cashew Chicken
Grain Free Enchiladas
Beef and Broccoli Stir Fry
Italian Meatballs
Tacos or Nachos

Thursday- Grill
Chipotle Bacon Sliders
Jerk Chicken
Steak and Veggies
Orange Drumsticks
Lemon Chicken

Friday-Pizza
Coconut Flour Pizza Crust
Earth Fare 🙂

Saturday- Date Night

Sunday- Hospitality/Leftovers

Breakfasts
Eggs/Veggie Omelet
Smoothies
Coconut Flour Muffins

Lunches
Almond butter Rice Cakes
Leftovers
Nitrate Free Deli Meat
Fruit
Soup

I am also looking forward to making more homemade ice cream this summer as we purchased an ice cream maker earlier this year. Some recipes:
